Once a natural byproduct of sea voyages to Europe, the beans were transformed by ocean winds and humidity. Today, that alchemy is recreated on land: beans are exposed to moisture-laden monsoon winds for 12–16 weeks in coastal warehouses, swelling and changing color as they absorb the monsoon spirit. The result? A golden-hued bean with remarkably low acidity, full body, and intense earthiness.
